Dembele did not score in the final but has been in deadly form since the turn of the year, scoring 22 goals including in the semi-final win at the Emirates.
The former Barcelona and Borussia Dortmund man has played wide for most of his career but has flourished in a more central role under Luis Enrique.
Now William Hill have cut his price for the annual award to 1/2, displacing former favourite and Barcelona teenager Lamine Yamal.
PSG won the treble this season and the manner of their 5-0 thrashing of Inter Milan final will help Dembele’s cause.
PSG are also in action in the upcoming Club World Cup – starting their campaign against Atletico Madrid on 15 June.
